In some ways watching subbed DBZ is like watching an entirely different show. A lot of the dialogue has been changed pretty drastically, it seems -- the unimportant stuff, mostly. It doesn't actually make much of a difference, unless you're really sticky about a translation as close to possible as the original.
What surprised me is that sometimes the English-dubbed version is actually better than the subbed. In the middle of the World Martial Arts Tournament, there's a movie called the "Cell Show", a "re-enactment" featuring a person in an SD Cell costume beating SD Z-warriors, then being defeated by an SD Mr. Satan. In Japanese, SD-Goku comments something along the lines of "Just what we would expect from Mr. Satan." In English-dubbed, SD Vegeta adds, "I wish I were him." I laughed so hard I nearly hurt myself.
The dubbing in DBZ is actually pretty good. Once it got into Black Water it was pretty good, in any case. Took the new people a while to adjust to it, but that's okay.
For voices, I think Chibi-Trunks, Goku, Krillin, and Vegeta sound better as their English dubs. Japanese Vegeta particularly just doesn't sound right. Conversely, most supporting characters sound better in Japanese. A lot of the other characters were captured pretty accurately in English.
I would also like to add that Spopovitch beating up Videl is possibly the most disturbing, unsettling, and downright... *awful*... scenes I have ever seen.
